meal plan: week of 3-24-2013

Another meal plan, coming right up!  Starting with this weekend...

Friday night:  Papa Murphy's Chicken Mediterranean deLITE!

Saturday Lunch:  just stuff from the freezer
Saturday Dinner:  Cooking Light BLT salad (it looks like it's going to be cold on Saturday with freezing rain, so I wouldn't be surprised if this was paired with some tomato soup!)

Sunday Lunch:  BHG Broiled Lobster Tails with chili/garlic sauce, baked red potatoes, some kind of veggie or a salad.  (The great thing about this is that the potatoes can cook while we're at church and the lobster supposedly takes only 15-20 minutes!  PERFECT!)
Sunday Dinner:  Tartines (open faced sandwich on whole wheat french baguette with deli meat, honey mustard, cheese, thin apple slices) and served with Annie's mac and cheese or baby carrots.

Monday:  Skinnytaste's crockpot Kalua pork, jasmine rice, stir-fried spicy broccoli florets

Tuesday:  Cooking Light's Quick Meatloaf with sauteed cabbage.

Wednesday:  Cooking Light's Crockpot Potato Soup (served with a side of Kalua pork and greens or sandwiches).

Thursday:  Uz is going to cook Men's Health Chicken Margarita with sauteed fajita veggies.


This week I tried to plan meals that used up what we had in the freezer and the pantry to reduce grocery costs this week.  We'll see how well I planned after the shopping trip!

daylight savings: not my thing

BREAKING NEWS:

School + working full time + teaching + ministry duties + exercising + taking care of the house is really kicking my patootie.  I feel like I can't keep up with everything, so obviously the blog was the first to go.  HOWEVER!  Last weekend while grocery shopping I thought I lost my list (which contains the meal plan and actual grocery list) and there was lots of panic and drama.  I thought it might be a good idea to document the list and meal plan somewhere else, JIC.

And we just had Daylight Savings Time change.  NO!

If I can, I'll try to get back into blogging quick recipes.  And about my dogs, because they are my kids.  And my garden.  Who knows, like I said, I've got a lot going on...  This is all so exciting, hmmm?

Oh!  And the foot surgery was totally worth it.  Immediate recovery (first 2-3 weeks) were absolute torture (and I really mean that, not exaggerating!).  However, I am able to wear shoes and walk without my feet cramping up.  It's fabulous!

Anyway, on to the good stuff!

3-15-13 Friday night:  Going downtown with my Uz to walk around, enjoy the weather (a high of 80 degrees!  YES!), and eat some tasty hot dogs.  I plan to get the "Lindsay" dog.  I named it after myself.  Did you know my name?  Now you do.  Basically, it's a hot dog (or brat!) with chili, fritos, cheese, and onions...  a "Frito Pie Dog".

Saturday Lunch:  scrounge around, eat something in the freezer/pantry.  I am planting my spring veggies so it'll be whatever is fast.
Saturday Dinner:  Sausage-Stuffed Zucchini Boats (LINK)

Sunday Lunch:  baked red potatoes with corn/black bean salsa and pork carnitas (LINK), topped with argulua and fresh salsa.
Sunday Dinner:  Both CookingLight:  Baked Pita Chips (LINK) with a Creamy Garbanzo Dip with Sun-Dried Tomatoes (LINK).  Uz the Hubs will probably get some chicken strips to go with his, the little meat-eater!

Monday:  CookingLight Maple-Soy boneless skinless chicken thighs (LINK), stir-fried green beans (or asparagus), and a baked potato or skillet potatoes for Uz.

Tuesday:  TOSTADA NIGHT!  Baked whole wheat tostadas with crockpot pinto beans (LINK) and topped with leftover pork carnitas, leftover corn/black bean salsa, and arugula.  Also, roasted asparagus (or green beans).

Wednesday:  CookingLight Stir-Fried Shrimp with Spicy Orange sauce (LINK), stir-fried broccoli, brown/red rice mix.

Thursday:  leftovers or PB/fruit wraps (LINK)

One small-ish change that I've made to my/our diets:  we're on a reduced-sugar, reduced-white flour diet.  I can't say no-sugar, no-white flour because it's not true.  The main difference is that we are deliberately choosing when to say yes to sugar/white flour, and even white rice.  Our snacks have gone from Fiber1 Brownies, yogurts full of artificial sweeteners, "healthy" cookies/breads to trail mix (nuts and dried fruit), dried apricots, yogurts with real sugar/no artificial sweeteners (check it out! Wallaby yogurts LINK), fresh fruit and veggies, nut butter, whole wheat veggie/no sugar muffins.  Sadly, this means less yummy desserts like cake, cookies, and brownies.  Friday night is kind of my "cheat meal"...  hence, hot dog night!

So, sit back and enjoy the ride.  I'm warning you:  it might be short.

week of 1-20-2013: menu plan!

It's been extremely busy the past week, so here is another weekly menu post-and-run.  Hopefully next week will slow down a little, but I'm not sure... I start two classes next week!  Eventually I'll get back in the groove.

Anyway, MEAL PLAN:

Friday night, 1-18-2013:  out to Saturn Grill!  I plan on getting the half and half, with a half Spicy Turkey sandwich on flatbread (avocado, no mayo please!) and either a cup of soup, a side salad, or fruit cup.  I can't wait!

Saturday lunch, 1-19-2013:  we have a birthday party we're going to, and I am pretty sure some BBQ is on the menu.  And CAKE.
Saturday dinner, 1-19-2013:  going to take it easy and use up some leftover marinara.  I'm thinking either pizza, some kind of pasta, or grilled cheese sandwiches dipped in marinara with veggies.  Also dipped in marinara.  And possibly topped with melted cheese.  CHEESE OVERLOAD, yes please!

Sunday lunch, 1-20-2013:  Going over to my parents' house to visit their new puppy!  So I guess we'll eat whatever my mom ends up cooking... that's what I'm talking about!  Puppy pictures to come!
Sunday dinner, 1-20-2013:  Some bean, veggie, and ham soup that I stuck in the freezer with homemade ciabatta bread.

Monday lunch, 1-21-2013:  We both have off work!  So we'll likely eat leftovers, scrounge, or grab some Chick Fil A.
Monday dinner, 1-21-2013:  Asian orange glazed drumsticks, rice, roasted Brussel sprouts.

Tuesday, 1-22-2013:  Cooking Light Spicy Shrimp Tortilla Soup topped with cabbage.

Wednesday, 1-23-2013:  Pan-cooked pork chops, sweet potato wedges, and some type of salad.

Thursday, 1-24-2013:  Crockpot chicken and black bean tacos or tostadas with toppings GALORE!  And some latin rice, and probably a side of fruit.

first meal plan of 2013

And here it is, the first meal plan of 2013!  I know this is probably more exciting than you can handle, but try to hold your applause until the end.

Friday 1-4-2013:  eating out!  <3  no dirty dishes, what fantastic news!

Saturday 1-5-2013 LUNCH:  meh, leftovers or something thrown together.  I'll be grocery shopping and prepping food stuffs and Uz will be rebuilding our fence that blew down in some crazy winds a couple weeks ago.
Saturday 1-5-2013 DINNER:  chicken enchiladas with latin rice (in the freezer), sauteed broccoli.

Sunday 1-6-2013 LUNCH:  spaghetti at my parents' house!  I'm in charge of bringing a salad.  Don't get too excited, y'all.
Sunday 1-6-2013 DINNER:  leftovers or something from the pantry/freezer.

Monday 1-7-2013:  chicken sofrito with rice, roasted sweet potato wedges.

Tuesday 1-8-2013:  chicken soup with cornmeal dumplings and veggies.

Wednesday 1-9-2013:  shrimp jambalaya.

Thursday 1-10-2013:  pan-cooked pork chops, salad, baked apples with topping.

Friday 1-11-2013:  probably out to eat! 

Snacks:  lightened blueberry cheesecake frozen bites, mixed unsalted nuts, yogurts (greek and regular), cheese sticks, fresh fruit, peanut butter (oh yum!), deli meat and cheese.

I also plan on making some shredded chicken and chicken broth in the crockpot next week.  One whole chicken will give approx. 24 oz shredded chicken meat and 10 cups of broth.  Making my own chicken broth (and freezing it) and shredded chicken from a whole bird is just one way that I'm trying to cut back in 2013:  The Year of Rice and Beans.

The past few grocery shops I have stayed under budget (or right at it!).  I hope that this week I can do the same!

So, uh, I think it's safe to say that my grocery cart will be full.  However, the majority of our groceries are produce and typically that doesn't add up the bill like non-produce items.  I guess we'll see!

meal plan: weeks of 10-7-2012 and 10-14-2012

Making up meal plans for the next two weeks, so we don't have to worry about grocery shopping until a few days after my surgery!  These plans are definitely flexible (especially week 2, because it's all on the Uz to get us food!)

Saturday 10-6-2012:
LUNCH:  flank steak tacos with tomatillo-avocado salsa, salad.
DINNER:  pasta with homemade canned marinara, chicken sausage, broccoli

Sunday 10-7-2012:
LUNCH:  church lunch
DINNER:  out for my Grandma's birthday

Monday 10-8-2012; Columbus Day:
LUNCH:  out with the Uz!
DINNER:  Cooking Light (CL) Italian Hoagies with roasted potatoes and green beans (~382 cals)

Tuesday 10-9-2012:
SkinnyTaste Pasta Bake with Spinach and Chicken Sausage (~390 cals)

Wednesday 10-10-2012:
CL Steakhouse Pizza (feta instead of bleu cheese!) with salad (~312 cals + salad)

Thursday 10-11-2012:
CL Cheesy Potato Soup and mini sliders (~447cals)

Friday 10-12-2012:
Probably Chick Fil A, because Uz has tickets to Batman Live.

Going out to a restaurant of my choice!

Wednesday 10-17-2012; SURGERY:
LUNCH:  Chicken noodle soup with rotisserie chicken
DINNER:  I think my mom is bringing a casserole over

Thursday 10-18-2012:
LUNCH:  CL Frito Chili Pie (not a wrap) (~521 cals for a big bowl, plus chips and cheese)
DINNER:  leftover casserole

Friday 10-19-2012:
LUNCH:  leftover casserole OR some frozen CL Fried Rice with Sweet Soy Sauce and chopped chicken I have in the freezer.
DINNER:  probably send Uz to get something to eat.

why, hello! it's been a while...

Good morning!

It's starting to feel like fall here...  the temperatures are dropping, the leaves are just beginning to change colors, and the mornings are crisp and cool!

I'm trying to get back into blogging, but excuse me if I lapse every so often...  a lot has happened since my last post.  My grandmother in Tennessee passed away, and then when we returned from the funeral one of our bird dogs died of a snake bite.  I could say that I was just "too busy" to blog (and I was busy!), but really, I was just struggling to get up in the morning.

As it usually does, life is becoming more bearable and I am actually wearing OUTFITS instead of just clothes, and cooking dinner and desserts again.  Uz (my husband, remember him?) kept up with taking pictures of cooking/meals every so often, but I don't have much to post.  So we're starting over.

A new season, a new start, right??

I bought a couple Cooking Light magazines, and so far they are fantastic recipes!

So this is the menu for this week:

Sunday:  grilled pork tenderloin, Cooking Light Asparagus with Balsamic Tomatoes (oh my! this was good!), salad.

Monday:  Cooking Light Chicken and Vegetable Soup, a 20 minute meal (this was also pretty fantastic)

Tuesday:  Cooking Light Beef and Broccoli Bowl with brown rice, and I'll add some mushrooms

Wednesday:  Cooking Light Peanut-Sauced Chicken Pitas with Fried Rice and Sweet Soy Sauce

Thursday:  Cooking Light Italian Sausage Hoagies and Roasted Potatoes and Green Beans

Baxter and Bella are both doing great! 



what a cutie!  he brought a toy to bed!
And Uz and I still love each other...  Aww! 


Baxter has been in behavioral obedience classes to deal with some of the neglect and abuse he went through before he came to us.  He has been really improving, and we love him so much!

I'm harvesting cute little pumpkins from the garden, so I'll do a post about that soon.

My foot surgery is scheduled in a couple weeks, so I'll likely take a week-long hiatus to heal up a little...  I won't be doing much for 6 weeks or so, because I'll be completely non-weight bearing.  Uz is going to be super-husband and take care of all the cooking and cleaning, plus helping me...  so, um, PRAY FOR US.  :)

meal plan: week of 8-26-2012

Friday night:  out to eat with a good friend of mine!

Saturday lunch:  probably something light and easy, like random veggie pizza!
Saturday dinner:  if it's not raining, we have a photography session and we'll grab a bite to eat after that; if it is raining, we will not have our session and we'll either have quesadillas or go out. 

Sunday lunch:  TABLT's (turkey, avocado BLTs) with macaroni and cheese with mixed veggies.
Sunday dinner:  chicken and rice soup

Monday:  cobb salad with baked chicken tenders and a citrus vinaigrette dressing.

Tuesday:  baked lemon pepper chicken with jasmine rice and broccoli.

Wednesday:  flank steak with warm bean salad; cantaloupe.

Thursday:  goulash and salad.

Friday:  most likely out to eat!


Nothing really exciting, still trying to clean out the freezer and fridge and keep the grocery costs down!

meal plan: week of 8-19-2012

Friday night - we're going out to a wedding, so we'll eat there.

Saturday lunch - a small snack or a large breakfast before we go to a Passover reenactment lunch at 2 pm.
Saturday dinner - Food and Family get-together with our Spanish-speaking group at church; I'm bringing two items:
     Skinny Carrot Cake with Cream Cheese Icing
     Skinny Artichoke Dip with pretzel crisps

Sunday lunch - grabbing something light after morning church, before we head to the grocery store
Sunday dinner - Cooking Light Mexican Chicken and Hominy Soup (aka posole)

Monday - Kickin' Green Chili and cantaloupe.

Tuesday - Crockpot Kalua Pig, jasmine rice, stir-fried veggies

Wednesday - Roasted chicken sausage and veggies

Thursday - leftover Kalua pig OR TABLTs (turkey, avocado BLTs) and Annie's mac and cheese with mixed veggies thrown in.

Friday - out to dinner with a friend

Thursday:  SkinnyTaste Crockpot Kalua Pig with stir-fried veggies and cabbage (no rice this time because we're having rice a lot earlier in the week)

Things are starting to settle back down into a normal routine, so hopefully our meals will too.  I only spent $30 last week, so I have quite a bit of extra grocery money...  and a good thing, because we are low on almost everything!

Saturday dinner:  Thai steak stir fry and green beans with brown rice (yep, still need to have that!)

Tuesday:  arroz con pollo

Wednesday:  summer veggies and chicken sausage

checking back in

What a crazy week!

My grandfather passed away, so Monday my family and I drove 17 hours to Tennessee to attend his funeral and visit with my grandma.  I was home for about 24 hours before Uz and I headed up to Tulsa to spend a few days there.  It's been so hectic, and I'm glad to be HOME.

Meal plan this week is basically everything from last week, since I was unexpectedly away.

Monday:  Crockpot Santa Fe Chicken
Tuesday:  Italian Pork Sandwiches with baked zucchini sticks and marinara
Wednesday:  Verde Pork Tortilla Soup
Thursday:  Asian Steak Stir Fry with brown rice and green beans
Friday:  leftovers

I'll try to catch up with some pictures of my time away over the last few days, but it might take a while!

meal plan: week of 7-15-2012

This meal plan will have a few extra days added on to the end of it... my husband and I are going out of town for that weekend to celebrate our first anniversary, so I won't get to do my weekend grocery shopping.  Sounds like an excellent trade to me!

Saturday Dinner:  pork and bean burritos with fruit (freeze half of pork)

Sunday Lunch:  out or at my parents' house
Sunday Dinner:  leftovers, sandwiches, or something fast and easy

Tuesday:  Italian pork sandwiches (adpated from here, but not fried) and baked zucchini sticks with marinara

Thursday:  Verde pork tortilla soup, adapted from Sing For Your Supper (with pork from Saturday)

meal plan: weeks of 7-1-2012 and 7-8-2012

I missed last week's meal plan, so I'm just going to include it in this post and make it a double whammy.

Week of 7-1-2012

Sunday evening:  Turkey, pesto, provolone, ciabatta sandwiches, broiled in the oven.

Monday:  Asian Orange Glazed Drumsticks, baked brown rice and peas

Tuesday:  out to Pepe's!

Wednesday:  grilling out with friends and family, so who really knows?

Thursday:  Skinnytaste baked chicken strips, bruschetta salad, fruit, maybe broccoli (since it's coming out of my ears!)

Friday:  playing it by ear

Saturday:  Veggie pizza, Sunflower Market hot wings, salad



Week of 7-8-2012

Sunday lunch:  Cafe 7
Sunday evening:  Broiled all beef hot dogs, Skinnytaste macaroni and cheese and broccoli casserole (prepared beforehand)

Monday:  Skinnytaste Crockpot Pork Carnitas (this is an OMG! recipe) tacos with fresh toppings, fruit salad, chips and homemade garden salsa

Tuesday:  Verde pork enchiladas (from the carnitas leftovers), latin rice, watermelon

Wednesday:  Skinnytaste Spaghetti and Meatball soup, salad, broiled ciabatta bread

Thursday:  if there's still pork leftover, I'll make pork and bean burritos with fajita veggies.  If there's not, I'll do grilled chicken fajitas with veggies and black beans.

Friday breakfast:  Crescent Roll Breakfast Ring (every Friday, the guys that Uz works with take turns bringing breakfast...  it's his turn!)
Friday:  probably out, depends on how much cash we have left at the end of the week!  :)

meal plan: week of 6-17-12

This week has been so hectic!  I've had training all day at work, so I'm going in early and staying late...  plus some other stuff going on that has just made life way too busy.  I think next week will be a little better... cross your fingers for me.

Saturday:  Annie's mac and cheese with mixed veggies and chicken sausage. 

Sunday lunch:  The Wedge Pizza!
Sunday dinner:  Mexican pork carnitas tacos, latin rice, salad, salsa, veggies

Monday:  pork carnitas tortas, grilled corn, grilled cabbage, fruit.

Tuesday:  Lemon garlic rosemary chicken kabobs over Greek salad.

Wednesday:  Broiled chicken thighs with feta and artichoke hearts, broccoli, grape tomatoes; salad

Thursday:  Pesto chicken with mozzarella and tomatoes, grilled veggie kabobs (zucchini, onion, bell pepper, cherry peppers, cherry tomatoes); grilled peaches

Friday:  OUT

meal plan: week of 6-17-2012

Friday night:  Going out to eat at Pepe Delgado's, one of our favorite little Mexican places.  They serve food just like Uz remembers eating at home and in Mexico...  fresh, fresh, fresh!

Saturday lunch:  Something fast and small.
Saturday dinner:  Mediterranean Chicken Kabobs with Greek Salad, tzatziki sauce, grilled corn.
Saturday desserts to make for Father's Day:  Lemon Creme Pie, Lemon cream cheese whoopie pies, cookies or Hummingbird Cake.

Sunday lunch:  Ribs and fixins over at my parents.
Sunday dinner:  Quick Thai Steak Stir-Fry with green beans, from EveryDay Real Food
Sunday dinner:  Crockpot Chicken Cacciatore

Monday:  Herb roasted chicken with veggies (potatoes, carrots, onions) and green beans on the side.

Tuesday:  I'm helping host a wedding shower, so it's pizza for the guys!

Wednesday:  Angelhair pasta with squash, tomatoes, broccoli;  served with chicken leftovers from Monday or grilled chicken breast.

Thursday:  Grilled steak, grilled corn, mojo kabobs from EveryDay Real Food.

Friday night:  Probably out!

meal plan: week of 6-10-2012

This week we're going to try something a little different:  we're going to start out, bright and early, at the local farmer's market to buy our produce, meat, etc.  Then we'll head to the Sunflower Market to purchase the rest of our groceries.  Sounds fun, plus I can grab a blueberry lime scone for a morning treat!

Hopefully we'll be able to drag ourselves out of bed...  Friday after work, we're driving 3 or 4 hours to Amarillo to pick up my husband's little brother to come stay with us (or other family members) for a few days/weeks/who knows!  We're still debating about bringing Bella...  hmmm.  So it'll be 3 or 4 hours there, and 3 or 4 hours back.  I know we'll get back late, so I really hope I can drag myself (and my hubs!) out of bed.



So, here's the meal plan!


This Friday night:  we'll eat on the road.

Saturday lunch:  I'm putting a whole chicken in the crockpot, so we'll have quesadillas and leftover corn/black bean salsa.
Saturday dinner:  We're having Friends and Family night with our Spanish-speaking group... I'm bringing the Hummingbird cake!

Sunday lunch:  Friends and Family Day, we'll eat on the grounds.
Sunday dinner:  Chicken and black bean burritos, leftover corn/black bean salsa, frozen latin yellow rice.

Monday:  Grilled steak, grilled corn, grilled veggie kabobs.

Tuesday:  Garlic-lime broiled pork chops, sauteed zucchini/squash and tomatoes, salad.

Wednesday:  Spaghetti with meatballs and mushrooms (and some grated zucchini!).

Thusrday:  SkinnyTaste Mediterranean Chicken Kabobs over salad with tzatziki sauce, grilled corn on the cob.

Friday:  Pei Wei BOGO!  :)

meal plan: week of 6-4-2012

This is "budget week"...  trying to use up my freezer and pantry staples and save some money, since I spent quite a bit the last couple weeks.

Monday:  Bangin' grilled shrimp, fried rice, grilled pineapple, small salad.

Tuesday:  Pomodoro with grilled chicken and white beans, salad.

Wednesday:  Queso fundido with sausage, cheese, and toppings; leftover rice; corn and black bean salsa.

Thursday:  Thai Cilantro grilled chicken; leftover rice or baked brown rice with peas; southwestern salad (no meat).

Friday:  probably out!

Saturday Lunch:  Grilled hot dogs, avocado, corn and black bean salsa.
Saturday Dinner:  Chicken sausage, onion, bell pepper kabobs.

I've also been in a baking kind of mood lately, so I'm thinking about whipping up one of these for snacking purposes:

meal plan for the week of: 5-21-2012

Meal plan for this coming week!  I'm trying to use up what we've got in the pantry/fridge/freezer, so that's why you see pulled pork twice...  I froze the leftovers from last week and I'm pulling them out this week!

I use this meal plan template (Meal Plan Template 2) every week to help me stay organized: Project Girl's Meal Plan Templates.  So helpful... and cute, too.

Meal Plan: 


Monday: Skinny Chicken Alfredo with Broccoli; Arugula, Penne, White Bean Salad (white beans instead of garbanzo, arugula/spinach mix instead of plain arugula).
We have a birthday at work on Tuesday, so I'm making this: Hummingbird Coffee Cake

Tuesday:  Pulled Pork Tacos, Corn and Black Bean Salsa, Fajita Veggies minus the tacos

Wednesday:  Mexighetti Bake with Salad; some kind of fruit.

Thursday:  Pulled Pork Pizza with Veggies (sliced zucchini, corn, cherry tomatoes, onion, cheddar cheese); some kind of vegetable

Friday: Probably out to eat!

Memorial Day Weekend:  We'll probably play it by ear, but I'll have a few quick and easy meals ready just in case.
     Zucchini and Corn Quesadillas, Salad, leftover Corn/Black Bean Salsa, Broiled Peaches/Apricots.
     Grill out with friends after the arts festival: hamburgers, fruit, salad, the usual grillin' out fare.
     Macaroni and Cheese/Broccoli Bake with Shredded Chicken.
     Whole Wheat Pancakes with fruit.
     Strawberry Balsamic Pizza.

This meal plan is definitely more flexible than I would normally put up, but we've got a holiday weekend coming and I'm not quite sure of our plans yet...  so flexible it will have to be!
