This meal plan will have a few extra days added on to the end of it... my husband and I are going out of town for that weekend to celebrate our first anniversary, so I won't get to do my weekend grocery shopping. Sounds like an excellent trade to me!

Saturday Dinner: pork and bean burritos with fruit (freeze half of pork)
Sunday Lunch: out or at my parents' house
Sunday Dinner: leftovers, sandwiches, or something fast and easy
Monday: Grilled steak, baked potatoes, salad, watermelon (happy anniversary to us!)
Tuesday: Italian pork sandwiches (adpated from here, but not fried) and baked zucchini sticks with marinara
Wednesday: Everyday Food Thai steak and green bean stir fry with brown rice
Thursday: Verde pork tortilla soup, adapted from Sing For Your Supper (with pork from Saturday)
Friday: Out of town

Sunday Dinner: quick spaghetti with frozen meatballs
Monday: Crockpot Santa Fe Chicken
Snacks: apples or celery with peanut butter; popcorn; deli meat and cheese roll-ups; fruit
