meal plan: week of 7-15-2012

This meal plan will have a few extra days added on to the end of it... my husband and I are going out of town for that weekend to celebrate our first anniversary, so I won't get to do my weekend grocery shopping.  Sounds like an excellent trade to me!

Saturday Lunch:  leftovers
Saturday Dinner:  pork and bean burritos with fruit (freeze half of pork)

Sunday Lunch:  out or at my parents' house
Sunday Dinner:  leftovers, sandwiches, or something fast and easy

Monday:  Grilled steak, baked potatoes, salad, watermelon (happy anniversary to us!)

Tuesday:  Italian pork sandwiches (adpated from here, but not fried) and baked zucchini sticks with marinara

Wednesday:  Everyday Food Thai steak and green bean stir fry with brown rice

Thursday:  Verde pork tortilla soup, adapted from Sing For Your Supper (with pork from Saturday)

Friday:  Out of town

Saturday:  Out of town

Sunday Lunch:  Out of town
Sunday Dinner:  quick spaghetti with frozen meatballs

Monday:  Crockpot Santa Fe Chicken

Snacks:  apples or celery with peanut butter; popcorn; deli meat and cheese roll-ups; fruit

My grocery list has a lot of meat on it...  hopefully that doesn't put me over the edge.

2.5 lb boneless pork shoulder blade roast

chipotle chile powder (check spice cabinet to make sure I don't have this)

28 oz. can crushed tomatoes

black grapes

2 oranges
1.5 lb green beans ($0.99/lb at Sunflower)
2 c. arugula
2 small, 1 medium baking potatoes
green onions
5 medium zucchini ($0.99/lb at Sunflower)
2 avocados ($0.77 each at Sunflower)
blueberries (Aldi for $1.29)
pineapple (Aldi for $1.19)
peaches ($0.99/lb at Sunflower)
squirt bottle
juice (on sale at Sunflower for $2.99 ea)
freezer containers
fish sauce
2/3 c. cashews
some dark chocolate
