Mother's Day weekend: RECAP


I survived a busy Mother's Day weekend!  I've got another busy week/weekend in front of me, but that's probably going to be the norm for this summer.  I've got big plans (watch for my summer bucket list coming soon!) and only a few months to get them all done.

I have a few pictures to share from this weekend (not as many as I would like, but I'm still getting into the picture-taking zone.  I'm so bad about remembering to take pictures!).  I hope everyone had a fun Mother's Day weekend...  here is a recap of mine:

Friday after work, I went with my mom and dad to Sam's and Wal-Mart to get the groceries for our Mother's Day dinner on Saturday night.  I think the only reason my dad went along was to harass the employees.  They dropped me off with all the goods at home, and my husband and I got to work.  We had a long list of stuff to do that evening, so we recruited a couple friends to help.  It was such a fun evening.

For dinner, I made torta-dillas with pulled pork, arugula/spinach mix, beans, cheddar cheese, guac, and corn tortillas.  After that we got to work.  Our To Do list included:
Roll 8 packs of deli meat and toothpick them.
Cut tons of fruit (watermelon, pineapple, oranges).
Slice 4 large bags of white and wheat rolls for sandwiches.
Send the guys to the store for more groceries.
Cook enchiladas.
Cook latin rice.
Sort groceries.
Put together Mother's Day gifts for all the mothers in our Spanish-speaking group.
Get decorations together.

We finished up around 10:00 and decided we needed some gelato.  We ran up to our local gelato place and pigged out!  I wish I would have taken a picture, but I didn't.  I got a medium cup with three flavors:  chocolate hazelnut, dark dark chocolate, and peanut butter crunch.  I tried a couple of new flavors that were wonderful (strawberry balsamic and blueberry cheesecake) but I guess I was in a chocolate mood.

My husband doesn't go out for gelato all that often (normally we buy it and store it in the freezer...  we currently have at least 10 flavors, but that's another story for another blog post!).  He asked for a large cone without realizing that it meant 4 different flavors!  The girl behind the counter asked him if he wanted 4 different flavors and was he surprised!  He ended up a very happy guy...  His choices were pistachio (it was wonderful!), chocolate chip, chocolate hazelnut, and something else.  I forget.

But check out all these flavors!  Of course, they don't always have them all at the same time, they usually do have a few new ones each time we visit.  YUM!

Anyway, we had a lot of fun watching Will Ferrell clips on YouTube (especially the trailer from his new Spanish speaking movie) and quoting Nacho Libre.

We got home around 11:00 and planned on watching a movie, but I crashed and fell asleep.

Saturday was busy scrubbing the house and getting ready for the dinner that evening.  My mom and husband went up with me to the church at 4:00...  My mom was in charge of decorating (all of the flowers were left from my wedding!), and I was in charge of getting the food ready.  My husband did all the manual labor!  We were ready by 6:30.  The dinner went really well...  Everyone enjoyed it and I hope all the mothers felt appreciated.  We cleaned up and left the church by 11:00 that night and crashed at home.

It wasn't a professional event by any means, but I think it was pretty darn good for setting up in less than 3 hours!

 Sunday's lunch went really well.  The pudding cake (it's more like a molten lava cake) was very easy and very good.  We all loved it.  I got to take 2 hour nap that afternoon so I was a happy gal.

Now it's Monday morning, and I'm trying to get back into my normal swing.  I have some cleaning up to do from this weekend, a few seedlings to plant into the garden, and big plans for cardio intervals tonight at the local walking track.  Hopefully it's a relaxing evening.

We're having grilled lemon garlic rosemary chicken, broiled artichokes, parmesan spinach tortellini, and salad for dinner.  I'll definitely be posting about that later... it should be delicious!

This weekend I have a baby shower (it's a boy!), so I'm trying to think of ideas for a cute gift basket to give...  what do new moms want/need?  It'll be fun, can't wait for this weekend!

  1. I just took a look at the list of flavors and holy cow! How do you ever decide on just 4?

    I'm so glad that I don't know of any places like this!!

    P.S. I'm glad your Mother's Day went well and everything looked wonderful! Your mom did a good job with the decorating too!

    1. they only have 20-25 flavors available at one time... and I ALWAYS get the dark chocolate. they let you taste before you choose, so that helps narrow it down. we don't go that often, or else it could become a really bad habit... and FAST.
